From Life is Rawesome to Reines and SHINE – What’s Behind The Change?

Today is an exciting day! I am saying good bye to Life Is Rawesome and will embrace the new name of Reines and SHINE.  While life still is in fact RAWESOME and I think I will always promote a high raw, plant-based lifestyle, there has been confusion about 100% raw and I would prefer my site to be a little more personalized.

With this new brand, I am launching a health revolution — a challenge.  Reines and Shine embraces the idea that every day is a new opportunity to make a change for the better.  Whether it be to change negative thoughts to positive ones, or to reduce our soda consumption, every little change counts.

We are grateful for the world and the opportunity to enjoy it. We must do what we can to not destroy it.  Our bodies are beautiful, strong, and courageous.  The self-healing power of food isn’t outrageous.  At 22 years young, learning to dance in the rain.  I am a dietetic intern, who feels frustration and pain. This world requires a health revolution.  It is up to you to contribute to the solution. Use what we have to make the most of our existence, every little change can make a really big difference. ❤

While this blog has been like a baby, I have seen it grow, and saying goodbye is making me kind of emotional right now, I don’t ever want to stop growing.  But at the end of the day, I know it isn’t about me.  It’s about saving the lives of the masses by inspiring to live a healthy lifestyle. Trying one recipe on my blog will improve personal and environmental health; for vibrancy, and sustainability. Any opportunity I have to inspire somebody to save his or her life is an opportunity I simply can’t miss.  This blog gave me that opportunity.  I could not be more grateful.

Happy August!  The fall semester is coming up faster than you think.  Before I went to college, I was nervous about gaining weight and not being able to eat healthily.  Studies show that 60.9% of college students gain on average 7.5lbs their freshman year.

1. Exercise

  • Get a group fitness schedule.  Group fitness classes offer all kinds of workouts from interval sculpt, to yoga, to Zumba and beyond.  It is also a great way to meet like minded people.
  • Get it done in the morning.  By the end of the day, the workout is likely to not happen.  Let the workout energize you and get you ready and fresh to focus the rest of the day.
  • Sneak it in.  Try a 2-minute wall-sit while brushing your teeth, walking an extra block or taking the stairs.

2. Eat Enough Fruits and Vegetables

An even scarier statistic than average college weight gain? 94% of undergraduate students don’t eat enough fruits and vegetables.

Here’s 10 ways to get enough in!

  1. Get a to-go blender so you can make green smoothies in your dorm room
  2. Steal as much fruit as you can from the dining halls
  3. Always have dried or fresh fruit in your backpack for a snack
  4. Whenever you eat a bowl of cereal or oatmeal, put a little bit of fruit on top
  5. Carrots, red bell peppers, cherry tomatoes, cucumbers, celery are great snacks to take on the go maybe with some hummus or peanut butter
  6. When making sandwiches in the dining halls, make sure to stuff them with lots of vegetables
  7. Try salad as a main dish, pile it high, and load it up!
  8. When you go to to the pizza or pasta bar in the dining hall, ask for light on the meat and cheese and PLENTY of vegetables
  9. Choose the vegetarian option at the hot bar
  10. Include a green salad with your dinner every night

3. Late Night Decisions

  • When we get stressed, we reach for high fat, high sugar, salty foods.  Avoid keeping a lot of junk food in the dorm room.
  • Purchase portioned out peanut butter or nutella packets to avoid overeating it
  • Keep healthier snacks like fat free granola, fat free popcorn, rice cakes
  • Try a brownie cliff bar instead of a brownie
  • Chocolate soy milk is a great dessert!
  • Keep alcoholic beverages to a minimum: 1 drink for women and 2 drinks for men per day is recommended

4. Be Careful Who Your Friends Are

  • Friends can pressure you to drink or eat more
  • Friends can judge you for eating healthily
  • Surround yourself with people who will encourage and support you to accomplish your goals

What’s the number one cause of death in America? According to the CDC, it’s heart disease. The preventable, unnecessary, easily avoidable, heart disease.  Half of men >65 years old are prescribed expensive statin medications that cause obnoxious side effects like muscle pain. Here’s 5 tips to decrease cholesterol naturally.

1. Minimize Dietary Cholesterol and Saturated Fat

Cholesterol is only found in animal foods like meat, dairy, eggs, butter, and mayonnaise, and products containing animal foods like pastries, ice cream, cakes, and cookies.  Our livers make cholesterol to help fat travel in the blood.  Cholesterol is not a nutrient and it is not necessary to eat it.

Saturated fat is fat that is solid at room temperature.  Most animal fats are saturated (fish being the exception).  Be sure to avoid processed  and red meats and high fat animal products like cheeses and creams.

2. Portion Control Healthy Fats

There are lots of benefits to a little bit of healthy fat but be sure to remember the two key words here, LITTLE BIT! Healthy fats would be the fats from plant sources or ones that are liquid at room temperature, like avocado, olives, almonds, sunflower seeds, and olive oil.  The general rule is 1-2 tablespoons of healthy fat is enough per meal.  Think of it as a garnish, not a main event.  Try these 10 tips to help decrease fat intake:

  1. Steam, boil, or bake food instead of frying it.  Be sure to use parchment paper instead of spraying pans with oil. It is super quick clean up and very effective non-stick.
  2. Sautee in water, it tastes the same!
  3. Buy a nonstick pan, I have made perfect pancakes without any oil
  4. Replace some of the oil in recipes with apple sauce
  5. Instead of eggs try making a “flax/chia egg”: 1 to 3 ratio- 1 tablespoon of ground flax or chia to 3 tablespoons of water, combine and let sit for about 10 minutes to let it form a gel.  Or, a mashed banana also works as a great egg alternative.
  6. Choose low fat plant based alternatives when it comes to meat, cheese, cream cheese, mayonnaise, milk
  7. Incorporate more products that are already naturally fat free like salsa, fat free marinara, jelly and jam
  8. Instead of snacking on fatty snack foods like chips, try pretzels, fat free organic popcorn, fat free granola, or rice cakes
  9. Be sure to read ingredients labels and look out for any added fats and oils, especially “hydrogenated oils” because those are trans fats!
  10. When you go out to eat, ask for dressing on the side so you can control how much fat you are eating and let them know you are sensitive to oil so they won’t sprinkle any extra on top of your food.

3. Eat Plenty of Plant Foods

The American Heart Association did not hold back when recommending plant foods like grains, vegetables, and fruits. 4-5 servings of fruit a day! That could be 5 bananas!

Plant foods like grains, beans, vegetables, fruits, nuts, and seeds are all sources of fiber.  Soluble fiber has been shown to help lower cholesterol levels.

4. Exercise!

The American Council of Exercise says most adults could gain substantial health benefits from 2 1/2 hours of weekly moderate intensity exercise, such as brisk walking or gardening.  That’s only 30 minutes a day 5 days a week! Our hearts are muscles too- gotta work those out!

5. Make Stress Your Friend

Health psychologist Kelly McGonigal has a great talk about recent research showing if we believe that the stress response is a good thing, the negative effects decrease.  Definitely watch her talk and remember: our stress is good! It makes us perform better, and there is nothing that we can’t handle.

Fat Free Vegan Blueberry Kale Bliss-Cream

Here, healthy + ice cream + so good goes in the same sentence.

You will need: high speed blender or food processor

Time: 5 minutes

Ingredients:

  • 2 leaves of kale, stemmed and rinsed
  • 2 ripe bananas, peeled and frozen for at least 6 hours
  • 1 fresh ripe banana
  • 1 soft medjool date, pitted
  • 1/2 tsp of vanilla
  • 2 dashes of cinnamon
  • 1/3 cup of frozen blueberries

Steps:

  1. Put the kale in first so it is closest to the blade
  2. Add in frozen bananas, date, banana, vanilla, and cinnamon
  3. Blend until creamy
  4. serve with blueberries and a dash of cinnamon
  5. Run around like you were just blessed with those beautiful legs. xo

1. They look good naked. Obviously, health conscious guys like to take care of themselves, but they don’t just do the whole buff brick-head lifting thing. They are aware of the benefits of endurance training as well, and let’s just say ladies: I hope you can handle it.

2. They are confident: The crap his friends give him for bringing a kale smoothie to class doesn’t faze this guy. He doesn’t need the approval of others to dictate his actions.

3. They know how to have fun. You can be confident that going with him to the bars won’t be embarrassing for either of you. You will not have to worry about taking care of him after a night out and he will be a fun date to try new things with and go on your own fun adventurous with throughout the day.

Find Out: What Is Mindful Eating?

Pause, take a deep breath, and flex your savor muscle.  Just like any skill, it takes practice to get good at it.  It is asking yourself, what does the food look like?  Where did it come from? Why am I eating it? What does it smell like…sound like…feel like? Do I like it?  What do I like about it?  How does it feel when I chew it?  Is it crunchy? Moist? Hot?

15 Habits For The New Year: Resolutions To Live By

Habits are everything. Let’s make a list of the habits we are proud of and a list of the habits we are not so proud of. This year, continue to build those constructive actions that make you happy. Here, you will find inspiration for good habits to make, and how to work on them.

1.    Wake up with an intention -Will it be gratitude and happiness or complaining and dismay today? The choice is yours. Make the decision, and set an intention to stick to. Make it a habit to wake up like this.

2.    Spend time with loved ones – Let’s put an end to the habit of blowing people off for work.  Love and love and nothing else, is all we need. Workaholics (like myself) are prone to opting out of quality time. This year, put love on top.

3.    Have Fun – What do you absolutely LOVE to do? Are you doing it? Like, ever? Well, you should be! This life is too short to not do what makes us happy. Get in the habit of committing some time to fuel your fun. Trust me, it’ll make it easier to focus in the long run.

4.    Turn around the negativity – Beautiful people are having complainy conversations these days, so let’s put an end to it. Next time someone complains to you, it is important to be empathetic, yes, but it is also important to recognize the good in life. Try not to let the complainers bring you down. Even worse is negative self-talk. We are all guilty of telling ourselves we suck now and then. Let’s consciously make it a habit to notice the negativity and turn it around.

Deadly Decadent Slimming Black Bean Brownies

I know, Black Bean Brownies?! EW Right?! I was honestly really nervous about these but they ended up being WAY BETTER than ANY BROWNIE EVER!

I just had an incredible gluten free vegan dinner date with three of the sweetest dietetics students!  They LOVED these brownies that Chef AJ inspired me to make.  Want delicious food that you can eat eat eat and still be slim and feel amazing after? Well Chef AJ and Registered Dietitian Julieanna Hever have got the recipes you need! These are so decadent and moist.  I recommend serving with cold banana nice cream.  Fresh brownies out the oven, fresh frozen bananas on top. OOoo baby you gotta try this!!

blackbeanbrownies These brownies are REAL FOOD! None of this refined flours, sugars or oils making you go crazy.  These are virtually fat free with a great source of omega-3 essential fatty acids from the flax.  I love the stable blood sugar keeping me fueled with carbs that are mixed with vitamins, minerals, and fiber.  Black beans- great source of protein and iron. Oatmeal is basically the cholesterol sucker.  Dates- the potassium and fiber filled candy.  And antioxidant rich cocoa?!  Heck- I’ll eat the whole &^%^& pan!!!

Unprocessed Black Bean Brownies and Chocolate Soft Serve– gluten free, sugar free, dairy free, flour free, almost fat-free, nutrient dense ❤

Ingredients:

  • 1 can black beans (drained)
  • 1 1/2 cup dates, pitted
  • 1/2 cup cacao or carob powder
  • 2 Tbs flax ground
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1 Tbs vanilla
  • 3/4 cup quick oats
  • optional: 1/3 cup vegan gluten free chocolate or carob chips, or chopped nuts!

Steps:

(I just threw all of the ingredients into my friends Ninja food processor, but I’m sure doing it this way would work well to ensure smoothness)

  1. Grind oatmeal in a food processor until smooth
  2. Add dates and black beans until smooth, adding in water or non-dairy milk if necessary to create a smooth, well blended consistency
  3. Add in the ground oats and the rest of the ingredients except optional topping and blend until smooth
  4. EAT ENTIRE BOWL OF BROWNIE BATTER
  5. ..just kidding..well, you could! Haha for brownies though: Spread brownie batter into a parchment paper lined, or sprayed with cooking spray, brownie pan and sprinkle chocolate chips or nuts on top.  Nuts would have also been really good folded throughout the batter for a nice crunch
  6. Bake at 350 F until desired ooeyness ❤
  7. Serve with Monica’s Chocolate Banana Soft Serve:
    • 1-2 frozen bananas
    • 2-3 Tbs unsweetened almond milk
    • 2-3 Tbs cocoa powder
    • optional 1 Tbs flax or walnuts or more chocolate chips!
    • Blend in food processor or Vitamix until smooth!

Sweet Potato Quinoa Burgers – Vegan and Gluten Free!

Sweet Potato Quinoa Burgers ~

Crowd pleasing, hearty, healthy vegan burgers. There is no way to mess these up- the ingredients will still taste fantastic. Inspired by Whole Foods and Istanbul’s Mediterranean cuisine. Great for parties, families, and Thanksgiving!

Makes about 24 beautiful burgers

Prep Time: 25 minutes   Cooking Time: 45 minutes   Total Time : 1 hour and 10 minutes

You will need…

  • Large pot
  • Steamer
  • Mashed potato masher
  • Cutting board
  • Chef knife
  • Large stirring spoon
  • Large bowl
  • Measuring cups
  • Potato peeler
  • 2 Cooling racks
  • 2 Baking sheets
  • Oven
  • Garnish: buns, tomato, avocado, mustard, ketchup, onions, pickles, etc.

Ingredients

  • 3 large sweet potatoes
  • 4 cups cooked quinoa (2 cups dry quinoa cooked in 4 cups of water)
  • 1 bunch parsley
  • 2 bunches dill
  • ½ lemon, juiced
  • ½ cup dried cranberries
  • 1 shallot or small red onion
  • ¼ cup ground flax
  • Salt and Pepper to taste

Prep for mise en place

  • Peel and steam sweet potato
  • Rinse and boil quinoa in 4 cups of water
  • Wash and chop parsley and dill How to wash parsley
  • Juice lemon
  • Chop shallot
  • Measure out craisins and flax

Steps

  1. Preheat oven to 450 degrees F
  2. Place cooling rack on top of baking sheet
  3. Mash steamed sweet potatoes until smooth in large pot
  4. Combine cooked quinoa with mashed sweet potatoes in large pot
  5. In a large bowl, combine parsley, dill, dried cranberries, lemon juice, shallot, flax, and spices and mix well
  6. Pour herb mix into sweet potato quinoa pot and mix well.
  7. Using a 1/3 cup measure, form the mixture into patties and place on the cooling rack on the backing sheet
  8. Bake for 40-50 minutes at 450 degrees F or until crispy.
  9. Serve over buns with tomatoes, avocado, lettuce, and choice of toppings and condiments.

Raw Vegan Desserts Demo and Recipes! (Oil Free and Sweetened with FRUIT!)

Last week’s Raw Vegan Desserts Demo was so much fun!  These demos are getting less and less nerve-racking :).  I am so lucky to have the opportunity to share how delicious and easy healthy food really can be!

Black Forest Cherry Brownie Bites

Food processor- S blade

  •  2 cups walnuts (preferably, soaked and dehydrated- however there is a law that it is illegal to sell raw nuts made in the US- they are all pasteurized.  Imported may be raw though)
  • 6-7 dates pitted and packed (I used an 8 ounce bag of coconut date rolls, I think there were 7 in there)
  • 1 tsp cherry extract
  • 6 Tbs cacao or carob powder
  • 3 Tbs water (if necessary- I didn’t use any water)

Process until smooth- delicious walnut butter can be made using simply walnuts in a food processor.  Just be patient- it turns super creamy!  Feel free to add dates or your favorite sweetener for sweetener, or a little salt.  The oils really come out and the brownie bites get super squishy and buttery!

  • ¼ cup dried cherries mixed in after blending
  • ¼ cup chopped walnuts mixed in after blending

After mixing in nuts and dried cherries, scoop about a tablespoon of brownie dough into mini muffin tins and let chill in the refrigerator for at least 20 minutes.  The walnut butter congeals when you let it chill.

Mango Nice Cream

High speed blender (like Vitamix or Ninja), or a food processor S blade (if using food processor, will take longer and definitely add a little water or let thaw out a little- might make soft serve, but still delicious!)

  • 3 ripe, peeled, and frozen bananas, chunked into fourths
  • 1 cup thawed frozen mango chunks (throw your frozen fruit in the fridge, nom nom nom!)

Blend until smooth and creamy.

I love brownies and ice cream separately, but I like them together even better!

Coconut Macaroons

Makes appx. 15, use a food processor S blade:

  • 4 cups sun-dried coconut
  • 1/2 cup raisin (soaked if available)
  • 1 cup coconut date rolls or medjool dates
  • 3/4 cup apricot soaked
  • 1/4 Tbl sea salt
  • 1/8 cup distilled water (depending on how much soaked dried fruit

1. Blend coconut in food processor until very fine/ oily/ sweet. (this may take longer than you think!  Let it blend until super smooth, about a full 1-2 minutes)

2. Blend (appx. 30 seconds- 1st pulse 5-6 times) all other ingredients

3. Using cooking scoop, make balls and roll in dried coconut

4. chill and enjoy!

Brownie Chunk Chocolate Soft Serve

Brownie Chunks:

Food processor S blade

  • 2 cups walnut
  • 1 cups (about 7) dates
  • about 1/3 cup cacao powder

Blend until super smooth and spread onto a pan or roll into balls and freeze.  After about 20-30 minutes or more, chop into itty bitty brownie chunk pieces.

Chocolate Soft Serve:

Food processor S blade

  • 3 ripe, peeled, frozen bananas, chunked into fourths
  • 2-3 Tbs unsweetened almond milk (or homemade almond milk, or just throw in some soaked nuts, or just water! 🙂 )
  • 2-3 Tbs cacao powder (depending how chocolatey you like it!)
  • vegan chocolate chips or MY BROWNIE CHUNKS! NOM!!

Blend everything except brownie chunks until smooth and fold in brownie chunks!  Top with fresh berries, yuum.

Gotta love coconut macaroons and brownie chunk chocolate soft serve separately… but together- simply heaven.  sweet little love pies. I don’t think I have to tell you to enjoy this one… but do be sure to savor. xoxo
